Another early morning...

Every Monday night I have a guest who comes and eats at 6:30 the next morning. No muffins, no carbs. Just plain scrambled eggs and lots of bacon, coffee and ice water.

This morning he was joined by a lovely lady whose husband was heading off to DHMC for a procedure at 7:30. The husband couldn't eat, but the wife could. She enjoyed eggs scrambled with smoked salmon, cream cheese and fresh chives from the garden, with toast and bacon on the side. I offered them a small batch of muffins to go so that the husband could enjoy them post-procedure, but he didn't want to be tempted by the scent of freshly baked muffins in their car. Can't say that I blame him!

Two more guests will be eating at 10:00. My daughter, Vicky, is lobbying for me to make chocolate/butterscotch chip muffins and as the guests are a young couple, I might even do that (or split the batch and put the chips in a couple muffins for her and blueberries in the rest). Sausage will also be on the later menu as Vicky has been requesting it.

I use McKenzie's Maple Sugar breakfast link sausage from the Coop. Absolutely delicious and it smells amazing while it's cooking. Good thing I didn't have it going for the couple heading to DHMC!
