Homemade salsa this morning...and Blueberry/Coconut Muffins

Lots of breakfasts this morning! Our 7:30 guests enjoyed Sour Cream Blueberry Muffins, Fruit, and entrees of Granola with Vanilla Yogurt & Fresh Berries and a Vermont Smoked Ham & Cheddar Cheese Omelet. The omelet was gorgeous (the guest said she wished she'd brought her camera). Next time I'll remember to take a picture before serving!

The group of 8 eating at 8:30 were a little more challenging. They got a fresh batch of muffins, this time Blueberry/Coconut. The entrees were: Poached Eggs; Buttermilk Pancakes; Granola with yogurt & berries; three orders of Eggs Scrambled with Smoked Salmon, Cream Cheese & Chives, with the salmon on the side; and two orders of Mexican Scrambled Eggs. But, one of the guests wanted the Mexican Scrambled Eggs without Cilantro. Well, it's part of the salsa that I use, so....... Vicky to the rescue!

My middle daughter, Vicky, is back from the Peace Corps (Niger, Africa) and is pondering her next steps. She was waitressing for me this morning and she loves the "Slap Chop" gadget that is widely advertised on TV. So, when the guest wanted cilantro-less salsa, Vicky said, "I'll make it!"

So - custom homemade salsa! I'm not sure what all she put into it besides tomato, but she was happily Slap Chopping away and tossing in this, that and the other (but no cilantro). It was very tasty! Perhaps a little on the spicy side (Vicky does like spicy foods) and the guest loved it!

We aim to please...especially when Vicky is in the kitchen!
