Mexican Scrambled Eggs
...a great start to the day!
My first guest down this morning has been doing an internship at DHMC and has come once or twice a week for the past three months. Her internship ends today and she decided to enjoy Buttermilk Pancakes and Bacon for her "last" breakfast...and I forgot to take a photo.
My second guest has come a couple of times over the past few years and also does something at DHMC - and ordered Mexican Scrambled Eggs. I drain salsa (it's about half liquid) and add the meaty bits to three fresh organic eggs from Muscle in Your Arm Farm. Scramble them well (really fresh eggs take a lot of scrambling!) and cook in a little butter. Garnish with a generous spoonful of Sour Cream and add a little of the thick salsa on top, and it's good to go. We alway have a fruit garnish on the plate (usually a slice of orange) and eggs dishes are accompanied by organic 12-grain toast.
My guests rarely leave the table hungry (usually they say they'll be set 'til dinner!).
Two more guests to go this morning. I sent the extra muffins off with my internship guest (she loves the Sour Cream Muffins with Jam Inside) so I'm off to make more.
