Lisa Cadow's Vermont Crepe and Waffle definitely stands out at the farmer's markets she attends. Rather than a booth like most vendors', Vermont Crepe and Waffle operates from a portable crepe cart which Lisa had made for her after attending crepe school in Brittany, France.
Lisa makes both savory crepes and sweet dessert crepes. Although the crepes carry a traditional French sensibility, she uses local ingredients to provide New England offerings like the Brattleboro Brie, with apples from Vermont, or the Norwich Happening with Vermont ham and cheddar. Gluten-free eaters will be happy to learn that the savory crepes are made with buckwheat and contain no wheat or gluten.
Vermont Crepe and Waffle currently attends the Hanover, Lebanon and Thetford farmer's markets, and may be popping up in other locations as well.

I asked Lisa about her experiences in the Upper Valley's farmer's markets and she had this to say:
"It has been exciting to watch farmer's markets in the Upper Valley really grow over the past few years -- and by growth I mean I've seen an increase in the number of people attending, the amounts of vendors selling products and the variety of towns offering their own markets. Farmer's markets are really becoming a part of our culture!
"I love working in a place where eaters can meet with the growers and, as in the case of Vermont Crepe, the cooks. And I'm proud to be alongside people - the farmer's, the craftspeople, the food artisans - who are doing such important, meaningful work.
"Bringing home treats at the end of every market, of course, has been a real bonus. I now have delicious Upper Valley summer memories of fudge, chocolate milk, thick marmalades, samosas, just-picked corn, and ruby-red strawberries.
"It's been fun to be one of the people bringing 'street food' to the Upper Valley. Hope to see - and eat - more of it in the future!"
